Teriaki Chicken

Last night for dinner, I baked the chicken breasts that I was marinading in Soy Vay Island Teriyaki sauce, cooked some white rice and some broccoli. It would have tasted better if we could have grilled it, but we were expecting rain. The chicken was nice and moist, full of flavor, thanks to the overnight marinade and had the right amount of sweetness to it. The kicker though, was the dessert ... homemade chocolate cake.

Summer and Grilling!

I love the summer! There is nothing better than 70-85 degree days where you can soak up the sun and go swimming and have tasty tasty food cooked on the BBQ. My Weber Grill is being held at my in-law's garage since I live in an apartment, but the complex I live in has those little BBQ grills you find at parks. Tonight for dinner, I took some beautiful boneless/skinless chicken breasts that I picked up @ Whole Foods Market. I cut some slits into the breasts so that the flavor of the seasoning got past the top layer and sprinkled kosher salt, black pepper, garlic and simply organic all purpose seasoning and a little bit of really good extra virgin olive oil. Then, we grilled them and once they had a beautiful sear on both sides, we slathered on some hickory brown sugar bbq sauce! It tasted great! My very picky son, who really only eats meat if it's tacos or spaghetti, asked for seconds which made me a very happy mom.

Who is Ashira?

Hello all! I've never had a blog before, but hey, there's a first time for everything, right? This blog is about my love of cooking and baking. My name is Ashira and let me tell you a bit more about myself.

I live near Ann Arbor, Michigan; I'm the mother of two young children whom I love more than I thought possible to love anyone. In addition to being a mom, I am also a college student (not at the University of Michigan sadly) and am majoring in Social Studies and minoring in History; I'm hoping to get a master's degree in Judaic Studies and a certificate in Holocaust studies. When I'm not with my kids or in class, I'm working as a cashier, or, now that my weekends are free, spending some much needed time with long lost friends. (I love you guys!!)

I have been cooking and baking since I was eight; I started out making macaroni and cheese (from a box) and baking cakes with my easy bake oven. As I got older, I lost the Easy Bake Oven and moved on to Betty Crocker brownie and cookie mixes, and eventually, thanks to the Foods and Nutrition classes offered by my high school, I started baking from scratch. I started with brownies and made my way up to apple crisp and muffins.

A few months ago, I was given a Kitchenaid Stand Mixer by a friend and purchased a pasta attachment set and since then, I've hit the baking and cooking band wagon and hardly purchase store bought breads and buns any more.

My absolute favorite thing to make, even if it is time consuming is bread. There is nothing like freshly baked bread with butter and jam. My kids think that I make the best cookies and cupcakes. But at 5 and 4, they're bound to love the cookies and cakes more than the bread.

I will be posting at least once a week to talk about things that I've cooked or baked, and maybe will even post a few recipes.

Thanks for reading my blog!
